Low-GI Peanut Butter Oatmeal Cookies

Peanut butter had always been considered as an unhealthy food that will make us fat. However, proven by recent researches and experiments, also a number of literatures, peanut butter is actually a "superfood" that is packed with nutrients and healthy fats and keeps us full for a very long time. It can be introduced into our daily diet through various ways, such as spread for bread and celery, or mix into your morning cereals, or like what we have done, use in a cookie recipe.

We used Pic's Crunchy Peanut Butter, which is a famous brand from New Zealand, the flavour of the peanut butter is rich and intense, without any artificial flavourings or additional sugar, the nutty flavour really stands out. Highly recommend this brand to anyone who is trying to introduce some healthy and tasty fats to their meals. (THIS IS NOT AN ADVERTISEMENT LOL)

The yield of this recipe is about 30, depending on the diameter of your roll of cookie dough and how thick you are going to cut them into. We used wholemeal flour and Stevia to make it low-GI, but you can adjust the proportion and use some regular flour and brown sugar if you wish to create a finer and denser texture. Enjoy your cookies!

The cookies were crunchy on the outside and chewy on the inside, and had a complex texture brought by the crushed peanuts and oatmeal. It is a great recipe if you are trying to make some healthy canapés that does not require much time to prepare. We hope you will enjoy the cookies as much as we did!
